What is a party with out a fizzy cocktail? Try this sweet and tangy Bellini – the girls will LOVE it!
Peach & Apple Bellini
Prep time: 10 minutes
4 ripe peaches, pips removed and cut into quarters
2 Tbsp lemon juice
100ml apple juice
750 ml Champagne or Prosecco (chilled)
1 apple for serving
Add the peaches, lemon and apple juice to the blender. Whiz for a few minutes until really smooth.
Divide the purée between your glasses and top them up with Champagne. Be careful when pouring the bubbly as it could easily bubble over. Top your glasses with a slice of apple each and serve immediately. Enjoy!
