Cookies & Cocktails – Chèvre, Avo, Radish & Micro Herb Toasts

If you’re planning on having some friends over and need a light snack, these little guys are super quick and easy to whip up. For the Cookies & Cocktails shoot we used Melba toast but thick slices of sourdough fresh from the oven are JUST as good!




Chèvre, Avo, Radish & Micro Herb Toasts

Prep time: 10 minutes
Makes 20


1 ripe avocado
100g chèvre
juice of 1 lemon
2 Tbsp olive oil
6 small radishes
20 slices of Melba toast
salt and pepper, to taste
1 bunch micro herbs


Halve the avocado, remove the stone and scoop out the flesh into a small bowl with the chèvre. Lightly smash with a fork, add the lemon juice and 2 Tbsp of olive oil.

Spread each piece of Melba toast with the avocado chèvre spread and top with radish and micro herbs. Serve immediately.
