Nothing beats a quick and simple salad – especially when you’re in a rush! This Julienne Cucumber Salad is oh-so-fresh and a super great weekday lunch. It’s a great side or add some quinoa and grilled honey soy pork strips to turn it into a hearty salad meal.
Julienne Cucumber Salad
Prep time: 10 mins
1 medium cucumber, julienne
200 g cherry tomatoes, halved
1 handful fresh coriander, roughly chopped
4 Tbsp olive oil
80 g feta, crumbled
2 Tbsp freshly squeezed lemon juice freshly ground salt and pepper, to taste
Julienne your cucumber, either with a sharp knife (mind those fingers!) or a julienne peeler (I have one – they’re GREAT!). Avoid using the seeded part of the cucumber as it holds a lot of moisture and could make your salad soggy and no one wants a soggy salad.
In a large salad bowl, toss your cucumber, tomatoes, coriander and feta. Add the olive oil and lemon juice before giving it a gentle stir, finishing off with the salt and pepper.
