‘Sweet Lips’ Iced Biscuits

Few things can brighten up your day like a pretty, colourful biscuit. Make these ahead of time so the icing can set beautifully and wow your girl-gang at the next tea party 😉



‘Sweet Lips’ Iced Biscuits

Difficulty: Easy
Prep time: 30 mins, excluding baking and icing time
Makes 36 biscuits

150g cake flour
100g butter
50g castor sugar
5ml vanilla essence
1.5ml salt

Royal Icing:
1 egg white
400g icing sugar, sifted
Pink food colouring

Cream the 100g butter and 50g castor sugar (add flavouring at this stage too if desired) and work to a soft dough with the 150g sifted cake flour and 1.5ml salt. Chill mixture till firm.

Roll out and press out shapes. Bake in the oven at 150°C until firm to the touch (10-15 minutes). Remove from the oven and cool on a wire wrack before decorating with pink royal icing and glitter!

For the Royal Icing:
In a small bowl, place your egg white and a tablespoon of sifted icing sugar and whisk together using a small palette knife. Slowly incorporate the icing sugar, tablespoon by tablespoon until you have icing that is runny enough to flood the biscuits but not too runny that it just flows all over the place. Scoop out some of the runny icing and add more icing sugar to the remaining runny icing to make it more stiff so you can pipe the borders of the biscuits. When you are happy with the consistency you can colour your two bowls of icing. I made the thicker icing a bit darker so that it defined the lips.

First pipe your borders and then flood the biscuits with the runnier icing. Sprinkle with glitter and leave to dry for at least a day or two!
